Making Raw Buckwheat Granola – YUM!
Lately I’ve been trying out a few raw food recipes. Over the past few days I’ve been preparing and making buckwheat granola. It’s pretty easy with not much preparation. It’s such a healthy snack too! Buckwheat is high in protien and fibre, is rich in B vitamins as well as phosphorus, magnesium, iron, folate, zinc, copper and manganes and it’s gluten free which is a bonus.
Ingredients
Buckwheat – soaked and sprouted – 2 cups sprouted
Pumpkin and sunflower seeds – soaked for 3 hours – 1 cupCoconut – 1/2 cup
Nuts – soaked for 4 hours (I used cashews) – 3/4 cup
Raisins – 1/2 cup
Fresh dates – handful
Honey – 1/3 cup
1 Tbsp Maple Syrup
I soaked some buckwheat in a jar over night.
Then I leave the buckwheat to sprout over the next few days. Rinsing the buckwheat each morning and evening. The water can get gloopy so you need to make sure to rinse it all off. The buckwheat wont sprout if they are damp all day.
Blend the dates and raisins in the blender. Then spoon the blended mixture into a big bowl and add coconut, sunflower seeds, pumpkin seeds, honey, maple syrup, a pinch of cinnamon and nutmeg. The dates and raisins help to stick the granola into clumps, along with the honey and maple syrup. Mix everything together and spoon onto the plastic dehydrator trays.
Dehydrate for 12 hours or longer. Until the buckwheat is nice and crunchy.
You can eat this as a snack on its own or with milk, berries, bananas and yoghurt. I sprinkle it over porridge to spice it up a bit.mmmm delicious and healthy.
You can add anything you like, almonds, pecans, sesame seeds or vanilla essence if you like.

Hi Debi, Your buckwheat granola sounds really good! Can you tell me how long will this keep if I put it in a sealed container? Thanks.
Hey Lisa, yes it definitely needs to be in a sealed container. I’d keep it until it’s not crunchy anymore. Up to 2 weeks. Although mine never lasts very long. My partner is all “I don’t want that healthy stuff” when I’m making it – but then it disappears pretty fast!
