How to Make Delicious Sweet Almond Milk
After talking with a friend and my sister I’ve been thinking about alternatives to milk. Not that I’m totally off milk. Just so I don’t have it as much. And after hearing all the bad things about soy milk I’ve decided to make some almond milk. So here we go!
Ingredients
1 cup soaked almonds
2 cups water
2 medjool dates
1 tsp vanilla
1. Purchase a nut milk bag
You can purchase this bag from the Living Food Lifestyle website. We got 6 for about $38 between three of us so the price was quite decent. You can use these bags for sprouting in or for making nut mylk.

2. Soak the almonds in water
The almonds need soaking to remove the toxic enzyme inhibitors allowing the enzymes to be able to do their job while digesting and the digestion process is a lot easier. Phytic acid, which inhibits the absorbtion of minerals is also reduced during soaking. Most people suggest soaking for 8-10 hours.
Rinse the almonds before soaking and when they are ready to use, rinse them a few times again.

3. Blend the Almonds
I used 1 cup of soaked almonds and 2 cups of water. Blend until it looks like frothy milk.


4. Strain the almond pulp
Pour the milk into the nut mylk bag and strain into a bowl. Squeeze pulp until it runs dry.


5. Blend milk with dates
Put the milk back in the blender with 2 dates and some vanilla or whatever flavouring you like. You could add cacao or carob powder, banana or whatever your heat desires!

What to do with the almond pulp?
I have put mine on a dehydrator tray and will dehydrate it overnight. that way I can store it in the cupboard and use it in muesli or in a cake mixture.

How to use the almond milk?
It’s delicious in a smoothie, on your muesli or just by itself since it’s quite sweet with the dates in it.
I’ll have mine for breakfast or as a snack during the day. I would mix some muesli with some sprouted buckwheat granola I made the other day and pour the almond milk over it. The granola is made with sprouted buckwheat, soaked almonds, sunflower seeds, pumpkin seeds, coconut, honey, and dates – all mixed together and dehydrated until it’s nice and crispy.

I get a lot of these great healthy alternatives from my friend Karen, if you are lucky enough to live in Christchurch she runs classes in the weekends on raw food for beginners and dehydrating lessons with amazing recipes. She makes the most delicious raw choc brownie!

Yeya, this actually looks pretty good. I live in Auckland and I don’t know if it’s because I was giving it a “man look” but I couldn’t find almond milk for the life of me!! ^^ And one question, is it 1 cup almonds or 1 cup SOAKED almonds because I’d imagine they’d swell a little bit?
Hey Lee, you are right. It’s just over 3/4 cup of dry almonds that I used which makes 1 cup of soaked ones.
I soaked more than that though and I dehydrate them and store them in an air tight container so I can snack on them. Nuts that have been soaked are supposed to be easier for us to digest because it breaks down the enzyme inhibitors that are in nuts.
I think you can buy almond milk from New World. I’ve just bought some ABT-4 probiotic yoghurt culture and I’m going to try make my own almond greek yoghurt. yum!
