Yummy Sweet Omelette Recipe! A Gluten Free Breakfast
I’ve been following the ‘Metabolic Efficiency’ eating plan for about 3 weeks now. Previously I used to eat a bowl of porridge after my swim each morning – but with the metabolic efficiency plan I’m cutting out the grains for the off season and increasing healthy fats and protiens.
I’ve been playing around with scrambled eggs for breakfast and this is one recipe I made in the weekend and absolutely loved it. I’ve had it for the past 3 mornings now
A grain free omelette.
Sweet Apple Omelette / Pancake
Omelette:
1/2 cup unsweetened apple sauce (grated apple also works if you don’t have this)
2 eggs
1 tsp vanilla essence
1 tsp cinnamon
1-2 Tbsp almond butter
Topping:
1/2 cup berries (1/2 a banana or any fruit can also be used)
Lots of plain unsweetened yoghurt (home made is best!)
1/2 – 1 Tbsp Flax seed oil
Mix all ingredients together and fry in a pan like a normal omlette. If you like you can make small pancakes with the mix. Heat the berries in the microwave for 20 seconds and squash them so they are like a sauce. Place the omlette / pancake on the plate and top with the heated berries and yoghurt and flax seed oil.
